Heat the pan over medium heat with the lid on.
Put the meat in the pan, cover with the lid and lower the heat.
Flip the meat over when the fat has been drawn out from the meat and the surface gets slightly burned. Turn the heat to medium.
Cook as you like.
Bring the heat down to low with the lid on, if you want it well-done. Take the lid off, turn the heat to medium and sprinkle on some water to finish.
